Canara Farm – Field Report

As you can see from the photograph above our Tomato crop at Canara Farm is filling up with a fantastic selection of heritage tomatoes. Some of them are being cropped and others are very close.The heat & dry weather have helped bring some of the other crops along as well, we now have a steady crop of mixed fine beans and the courgette flowers are proving popular amongst many chefs through-out the South West. We have some other fantastic produce growing as well which will be available very soon. This includes peppers & strawberries. ‘Ten Mile Taster’ Menu at Merchant’s Manor a triumph…

Spectacular local produce presented in an innovative and exciting style sums up the Ten Mile Taster Menu served to diners at Merchant’s Manor on Saturday 12th July. Chef Dale McIntosh and his team produced six exquisite courses highlighting the amazing fresh food available from the area immediately surrounding Falmouth. Each course was explained by the perfectly drilled waiting team but also accompanied  by a postcard sized information card, the full set making up a lovely momento of the evening. Our own Canara Farm produce took centre stage in four of the six dishes and played a prominent supporting role in the other two. A glass of Knightor fizz and the beaming smile of Merchant’s Manor proprietors Nick and Sioned greeted diners on arrival. The first course, ‘Canara Farm Fields’, featured the best of our own produce served as a fresh salad on a scorched half-log in imitation of ploughed fields; Lizard Leaves, heritage carrots, beetroot and haricot beans were decorated with beautiful blue borage flowers, garlic ‘air’ and ‘edible soil’. ‘Courgette and Crustacean’ followed next – one of our delicate courgette flowers stuffed with Mylor crab accompanied a perfectly cooked lemon sole fillet garnished with oca leaf, oyster emulsion and cucumber. The third course, ‘Beetroot, Beetroot, Beetroot, Beetroot’, acted as a pallet cleanser – who knew beetroot was so versatile or came in so many colours? The centrepiece was a deliciously refreshing beetroot and horseradish sorbet, perfect before the meat course ‘Peas, Pork and Lobster’, a superb combination of slow cooked belly pork from the renowned free range Primrose herd, delicate Mylor lobster, tender Canara Farm peas and beans...
