Cornish Asparagus season. As the 1st of May approaches (the official start of British Asparagus season) we are excited to announce that we now have Cornish Asparagus from Tregassow Farm available. Tregassow Farm 200 acres just outside of Truro, is owned operated by John and Jenny Keeler,the Keelers are the largest growers of asparagus in Cornwall and Tregassow Farm asparagus is one of the most sought after crops of aspargus in Cornwall. The Keelers reputation as growers of high quality asparagus has come from over 10 years experience perfecting the art of growing asparagus, which has become a profitable niche crop for them. Asparagus is a difficult crop to grow, and requires a significant investment in time, resources and money. Crops of asparagus are not ready to be harvested until the third year of planting & to harvest spears, you have to wait until they’re about 12cm long and remove them with a serrated knife, cutting them off 7cm beneath the soil. New Berries

This morning in our fridges we had a delivery of some fantastic looking & tasting berries. Pineberries & Strasberries. What is a Pineberry? The word “pineberry” is a fusion of the words “pineapple” and “strawberry” and refers a sweet white fruit studded with red seeds. The fruit produced by pineberry plants is very aromatic and has flavor that most say is reminiscent of pineapple while retaining the texture and feel of a strawberry. When the fruit is sweet and juicy enough to eat, the flesh is almost totally white but studded with red seeds – the reverse of the usual variety. Discovered wild in South America and rescued from extinction by Dutch farmers, they can now be bought in Waitrose. They are smaller than most commercially grown strawberries, measuring between 15 and 23mm across – slightly less than an inch. It is claimed by VitalBerry that Pinesberries are the oldest variety of strawberry, until 2003 they were all but extinct, Dutch Farmers found Pineberries growing in France and decided to commercially grow them. It took them six years to develop plants that allowed for commercial sale, with their unusual appearence and sweet taste and aroma they could make a splendid addition to any desert menu. Strasberry Strasberry – a merging of the words raspberry and strawberry, refers to a type of strawberry that has the small size and deeply pitted seeds of the raspberry. Late yesterday afternoon we collected the first crop of Lizard Leaves from Canara Farm. It is a brassica blend of five different leaves, the baby lettuce, chards etc come in later in the season. At the moment stock will be limited but as always this high quality blend of organic leaves is worth the wait and once the crop gets into full production we hope it will prove as popular with our customers as it has in previous years. Our Essential Foods Range is always evolving to reflect the requirements and trends of kitchens we have recently added several new products to this range. Pomegranate Molasses Has a sweet-sour flavour and a lush fruit aroma. In Middle Eastern cooking Pomegranate Molasses is traditionally used as an ingredient in sauces, casseroles, and marinades for barbecued meat. In the West Pomegranate Molasses is used in salad dressings, on ice cream, as a drinks mixer, in cocktails, to flavour tea or as a diluted drink. Tamarind Paste The pure concentrate form of the fruit from the Tamarind tree. Harissa Paste Hot and spicy, add to cooking for heat or use as a sauce. In Morocco it is often used to dip meat. Rice Vinegar Chinese rice vinegars are stronger than Japanese ones, and range in colour from clear to various shades of red and brown. Chinese and especially Japanese vinegars are very mild and sweet compared to distilled and more acidic Western vinegars which, for that reason, are not appropriate substitutes for rice vinegars. Chinese rice vinegars are made from huangjiu, a type of rice wine. Liquid Smoke Liquid smoke brings instant outdoor BBQ flavours to your cooking, with just a few shakes.
