Our Team | Tracey Leech

In celebration of International Women's Day we've decided to put the spotlight on just a few of our dedicated and passionate team members here at WestCountry.


Tracey has been with us for a whole decade! and is one of your trusted North Coast Account Managers based at our Falmouth Depot.



For those who do not know Tracey well, she is quite the collector of beagle hounds. In her down time she enjoys walking and cycling, especially on the coast from Porthtowan to St Agnes, and embroidery.

Quick recipe idea for your favourite food type: Ingredients

  • 1 large onion

  • 3 garlic cloves

  • 500g British beef mince

  • 2 x 400g tins chopped tomatoes

  • Red wine stock paste

  • Cooked pasta, grated parmesan and fresh basil, to serve

Method

  • Finely chop the onion,  and crush the garlic and fry for 5 minutes.

  • Then add the beef to the pan. Add the tomatoes, stock and simmer for 30 minutes, stirring occasionally.

  • Once the ragù has reduced and thickened, stir in a good drizzle of oil, then taste and season if necessary.

  • Serve tossed with cooked pasta, topped with grated parmesan and fresh basil leaves.

Covid 19 specific question – what’s the most positive thing you will take away from this time? Spending more time with family and exploring the beautiful county we live in. What's next for you?
